Help an established restaurant find its rhythm.

Jesse’s involvement
Turnaround & hands-on operations
Jesse helped turn around Hamasaku, an established Japanese restaurant in Los Angeles. His work focused on the daily operation behind the dining experience, while respecting the restaurant’s existing identity.
01 / The story
The starting point
Menu choices, purchasing, labor, reservations and service all affect each other. The work brought these decisions into a clearer daily routine for the restaurant and its team.
02 / The story
Jesse’s role
Hands-on operating work included reviewing menu performance and food costs, improving staff training and pre-shift communication, and refining reservation and table flow. This was a turnaround and operating role in an existing restaurant.
03 / The story
Working with the restaurant
The project depended on the restaurant’s chefs and service team. Jesse’s contribution was to connect the business decisions with what happened in the dining room each day.
04 / The story
Back to profitability
Jesse returned Hamasaku to profitability within six months.
