How We Help

How we work.
Built around your restaurant.

From a new concept to a better-running restaurant. We start with the questions that matter, agree on the work and turn it into practical steps.

El Barrio Cantina dining room

Two starting points

A new restaurant

Clarify the idea, guest, food and brand. Then connect those decisions with the opening plan, staffing, service and daily systems.

An existing restaurant

Look at what is holding the restaurant back. Prioritize improvements in the menu, service, food costs, staff training and everyday operation.

Areas of support

Connect the idea
with the everyday.

01

Concept & brand

Who the restaurant is for, what makes it recognizable, and how the food, name, room and guest experience fit together. Naming, visual direction, photography and the way the restaurant tells its story can be part of that work.

02

Menu & pricing

Menu structure, signature dishes, ingredient sourcing, portions, prep and pricing. For existing restaurants, look at what sells, what it costs and what the kitchen can consistently deliver.

03

Service & staff training

The way guests are welcomed, the flow of service, reservations, pre-shift communication and the language staff use to explain the menu. Training should make those expectations clear and usable on the floor.

04

Costs & daily systems

Food costs, purchasing, labor, prep levels and daily routines. The aim is to make the numbers useful in everyday decisions, with priorities based on the restaurant’s actual needs.

05

Opening support

An opening roadmap, vendors, staffing, training, service flow and launch priorities. Agree on what needs to be ready, who is responsible and where hands-on support will help.

06

Japan to the U.S.

Local guest expectations, neighborhood fit, menu language, pricing and operating realities. Decide what to adapt and what to keep, with English and Japanese support throughout the discussion.

The process

A clear next step.
Then the work.

  1. Talk about the restaurant

The idea or current operation, location, stage and biggest unknowns.

  2. Look closely

Review the relevant menus, costs, service or opening plans together.

  3. Agree on the priorities

Define the scope, responsibilities, fee and the next practical steps.

  4. Put the plan to work

Make the agreed changes with the owner and team. Implementation support is scoped to the project.

Before we start

Is this only for Japanese restaurants?

No. Jesse works across cuisines. Japanese dining is a specialty, and he also brings experience in Mexican and Vietnamese restaurant projects.

Can you help a restaurant that is already open?

Yes. Menu performance, service, food costs, staff training and daily systems can all be starting points.

How is the engagement decided?

We discuss the restaurant and agree on the scope and fee before work begins. The first step is a conversation about what you need.

Your next chapter
