Space Design: Planned an intimate, immersive layout that supports bartending theater and efficient service at 20 seats.
Menu Development (with Kevin Lee): Built a focused program balancing Japanese ingredients and modern technique with approachability.
Launch & Ops: Opening playbook, pricing, staffing, and service standards to maximize throughput without losing craft.
