The Challenge

Transform a run-down neighborhood dive bar into a design-forward destination that feels like coastal Mexico—without losing neighborhood warmth. We needed to:

  • Reimagine the space flow around a high-performing bar

  • Build a shareable small-plates menu that’s modern, bright, and scalable

  • Launch a serious tequila/mezcal program with balanced, sessionable cocktails

  • Stand up systems (COGS, labor, prep, inventory) that protect margins from day one

  • Tell a compelling brand story that connects with Long Beach locals and visitors

Our Approach

1) Positioning & Brand Story

  • Defined the promise: “Modern Mexican Tapas with Tulum Vibes—Long Beach energy, coastal ease.”

  • Built a tone and visual system—sun-washed textures, warm woods, plants, and hand-touched finishes—to signal approachable quality.

2) Spatial Redesign

  • Redesigned the bar to make the bar the stage, improved service circulation, and created cozy, social zones.

  • Material palette: natural woods, plaster, greenery, stone textures.

3) Menu Architecture (Small Plates First)

  • Shareable modern Mexican small plates with citrus, heat, herbs, and crunch; flexible for parties of 2–6.

  • Ceviche/crudo anchors, plancha/grill for smoky depth, and veg-forward options.

  • Engineered portions & prep ladders to protect food cost and speed.

4) Bar Program (Agave, Balanced, Repeatable)

  • Curated tequila & mezcal list; clarified house specs for consistency.

  • Signature builds: citrus-forward, lightly herbal, clean finishes; zero-proof cocktails.

  • Implemented tap system for fast fresh batch cocktail delivery.

  • Back-bar layout, station diagrams, and garnish rail designed for speed & cleanliness.
